Moutai, a renowned Chinese premium baijiu, originates from Maotai Town, Renhuai City, Guizhou Province. As a globally recognized symbol of China, its brewing history dates back over 2,000 years to the reign of Emperor Wu of the Han Dynasty, and it continues to play a significant role in Chinese culture. Moutai is one of the world's three major distilled spirits alongside Scottish whisky and French cognac, and remains the top choice for celebrating successful collaborations, fostering friendships, and is an indispensable liquor at diplomatic state banquets of New China.
Kweichow Moutai can only be produced in Maotai Town, Guizhou Province. Surrounded by mountains and located in a river valley, the region enjoys mild winters, hot summers, high annual humidity, and relatively stable airflow, creating a relatively enclosed microenvironment conducive to the growth of brewing microorganisms. Its raw material is 100% local Hongyingzi sorghum, with amylopectin content exceeding 90% (compared to 70% in ordinary sorghum), making it suitable for Moutai's multi-round steaming and fermentation process. Through generations of inheritance, improvement, and development by Moutai craftsmen, the brewing techniques have become highly sophisticated and unique. From raw material entry to final product release, the process takes at least five years, involving 30 procedures and 165 operational steps. The base liquor production cycle alone lasts one year, including nine cycles of steaming, eight rounds of fermentation, and seven separate rounds of liquor extraction. Production is highly seasonal: qu(Qu is a saccharifying and fermenting agent)making starts at Dragon Boat Festival and sha (sorghum) are fermented during the Double Ninth Festival, aligning with natural climate rhythms. It features three high-temperature characteristics: high-temperature qu making, high-temperature pile fermentation, and high-temperature distillation. The final Moutai product requires blending over 100 types of base liquor.
In 2001, Moutai became China's first baijiu protected as a geographical indication product, and "Moutai Traditional Brewing Techniques" were included in the first batch of national material cultural heritage lists. By 2006, "Moutai Traditional Brewing Craft" was listed as a national intangible cultural heritage. As of 2025, Moutai has topped the world's most valuable spirits brand list for ten consecutive years.
